1 cup whole wheat flour
1/3 cup oatmeal or oat bran or wheat bran
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
3 ripe or over-ripe bananas
1/3 cup brown sugar
1 egg or 1/4 cup egg beaters
1 tsp vanilla
2 tbsp honey
1/2 cup walnuts or chocolate chips (optional)
Preheat oven to 350 degrees fahrenheit. Grease a muffin tin with butter or PAM. In large bowl, combine flour, bran, baking soda, baking powder, and cinnamon. In a second bowl, mash the bananas, and then combine with the egg, sugar, vanilla, and honey. Make a well in the dry ingredients bowl, and fold in the wet ingredients. Add in walnuts or chocolate chips or other optional ingredients.It is okay for it to be lumpy - do not over-mix. Pour mixture into muffin tin, and spinkle brown sugar and cinnamon over the top of each muffin. Bake for approximately 12 minutes. Let cool for 5-10 minutes when done. Makes 12 small muffins.
